Dinner on the Patio

Dinner on the patio: Crunchy Chicken Milanese made with thin-pounded chicken breasts breaded with flour, beaten egg, panko, then pan seared in 2 TBs olive oil. It’s paired with a honey/mustard (with a kick of cayenne) sauce for dipping, and arugula tomato salad with a bit of mustard in the creamy vinaigrette.

Fast, easy, and serious yum. Tip: ┬áThe easiest way to evenly flatten a boneless chicken breast is to pound it with a heavy pan. It’s also a great way to relieve stress and/or frustration.
